A scimitar, or cimetar, is an awesome knife for cutting and portioning large cuts for meat and fish. The curved blade especially useful when skinning fish. Victorinox boning and butcher knives are essential, high value tools for all aspects of breaking down and portioning meats and fish. The handles are easy to grip when wet and slippery, and the blades are easy to care for and hone back to a sharp edge when they start to slow down.

Stamped from high carbon stainless steel, the blades are expertly heat treated and ground with precision. The patented Fibrox handles are NSF approved and are molded from high quality polymers with minimal nooks and crannies for unhygienic bacteria.

Victorinox's kitchen knives are used in almost every restaurant and butchers shop in America at this point, and for a good reason.
