Sujihiki knives are super sharp fine slicing knives, and excel at slicing cooked and raw meats and fish. We also love sujihiki for doing fine work vegetable prep. The TUS series sujihiki features as modified kiritsuke style tip that make for even less drag when finishing a cut.

Sakai Takayuki's TUS series knives offer very thin stainless steel blades that hold and edge and are easy to re-sharpen. The stamped blades are made of high-carbon stain resistant Japanese steel, and the full tang riveted handles are made of durable pakka wood. We think these are an excellent choice as an introduction to Japanese knives and as an affordable professionals knife.
