These Nakiri knives from Sakai Kikumori are a great introduction to the Nakiri shape, a knife most often used for thin vegetable slicing. They have a slightly heavier feel thanks to the tang through western style handle, and a bit of curve towards the tip, making them easy to rock a bit too for folks used to their western chef's knives. These are slightly shorter knuckle clearance wise to some taller Nakiri, so will feel like a smaller utility knife to someone with very large hands.
Sakai Kikumori’s Damascus Tsuchime series have a robust three layer blade with a VG10 steel core, hammer-marked Damascus patterned cladding and a comfortable western style handle. These knives have excellent edge life and wear resistance.
Sakai Kikumori is the flagship brand of Kawamura Hamono, producing top quality Japanese and Western style kitchen knives in Sakai, one of the oldest knife making centers in Japan. They have been producing knives since the 1920’s and have maintained long standing relationships with some of the best blacksmiths and blade grinders in Sakai.
