These knives are hand forged with an Aogami #2 (Blue #2) steel core, and have a good edge life, and are easy to sharpen. The iron cladding has a kurouchi finish, also known as a blacksmith's finish, leaving the final black scales on after the last heat treatment. The kurouchi will slow down the patina and rusting properties of iron, and will eventually wear and polish with years of use and washing. These knives are somewhat roughly finished (which attributes to their excellent price point) and would make an excellent project knife for someone wanting to refine their sharpening and thinning skills.

**Dry thoroughly after use. Left wet, carbon steel can rust, dull quickly and develop pits in the edge. With proper care, the blade will develop a patina, which will help protect from further rusting.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
