K Sabatier

For 8 generations, the French company Sabatier Aine & Perrier has maintained the brand K Sabatier, and produces excellent professional level kitchen knives. Still a family run operation, the folks at K Sabatier have extensive relationships with the top craftspeople in Thiers, France. We find their knives to have excellent cutting feel, mostly thanks to an extra thinning process in the grind, making them quite thin behind the edge. The thin edge also makes for easy re-sharpening, and they are especially responsive to touching up the edge on a steel.
