The K Sabatier Au Carbone series have a classic French profile, drop forged full tang blade with a round bolster and a sleek riveted handle. They are somewhat thinner and lighter than a typical German chef knife, with good cutting feel and food release. They can handle a wide variety of tasks, making them a great choice for any avid cook.
**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
PLEASE NOTE! The carbon steel knives from K Sabatier may have small bends and warps in the blade, due to the manufacturing process. They also may have light pitting and rust from long term storage. They will be cleaned and sharpened before shipping.

It's a good knife. I feel like the 6" chef's makes a really good utility knife as the heel is shorter than the 10" chef's and much lighter as a result. I could probably do most of my work in the kitchen with a K sab 6" chef, 10" chef, and paring knife. I don't mind using the 6" for paring tasks by grasping the blade if it's not a lot of time spent doing paring tasks.
The K sabs have a really nice distal taper so you can get fine work done pretty well with the tip and the balance is good so you have control.
I really like it. I think it's squarely in the good knife category, but not my favorite as I tend to like the balance of Japanese blades a little more. This competes with my tall petty with a 5" blade. I would not choose it as my go-to knife as I prefer a taller blade at the heel, with big handles, but it's a good compact knife with acceptable knuckle clearance for me and good for small work areas. I suspect my wife would really like it if it were stainless and plan to get a stainless one for her in the elegance series.
I bought this for myself, after giving the stainless versions to my girlfriend and sister. They both love their knives, and I was really enjoying using them when at their houses. I didn't think I really needed another chef knife, since I have a 10" Wusthof, an 8" Thiers Issard, and two 7" Santokus (Shun & a surprisingly good Top Chef branded one), but I really liked using this knife, and decided to get one for myself. I have a vintage Swedish carbon-steel Nogent-handled carving knife that I like and so I decided to get the carbon version. I've enjoyed this knife a lot, and use it as much as my 8" Sabatier (I do prefer the French knife shape over the German). It holds an edge and sharpens well, and is discoloring as a carbon knife does, which may bother some, but it's part of what it is! Uptown has been a pleasure to work with, and I highly recommend them!
