The K Sabatier ‘Authentique’ series have a classic French profile, drop forged full tang blade with a round bolster and a sleek riveted handle. They are somewhat thinner and lighter than a typical German chef knife, with good cutting feel and food release. They can handle a wide variety of tasks, making them a great choice for any avid cook.
For 8 generations, the French company K Sabatier have been producing excellent professional level chef knives. Still a family run operation, the folks at K Sabatier have extensive relationships with the craftspeople in Thiers, France. From forging to handling to final fit and finish, the methods and materials have changed over the last 200 years, but the attention to detail has been maintained.
*No soaking or dishwashers. Dry well in between uses to prolong edge life.

I am a home/hobby cook. Purely for fun, I wanted to experiment with using a utility knife for all of my prep work. This knife fits the bill! It is capable of every task I’ve asked of it so far. It is beautiful, comfortable, and sharp enough out of the box.

This has become my favorite smaller knife. I bought one for my girlfriend who loves it and uses it all the time, then got another one for my mother who can't say enough good things about it. I ended up buying the carbon-steel version for myself, and use it all the time! It's a deft knife that is easy to use, is versatile for all kinds of cutting duties, holds an edge and sharpens/hones easily. This would be a great first knife for an young aspiring cook, as well as for smaller people, though it's fine for those of us with larger hands, too. While I like the carbon version for myself, most people will appreciate the convenience of this stainless version.
