Featuring a Chromax steel core, a steel often compared to Aogami. They have excellent thin, convex grinds for smooth cutting a good food release. The cladding is stainless steel. Handles are octagonal walnut wood.
Kagekiyo knives are produced by Baba Hamono, one of the top quality cutlery producers in Sakai, Japan.
**Dry thoroughly after use. Left wet, Chromax can rust, dull quickly and develop pits in the edge.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.

I usually don't write reviews but wanted to take the time to do so for this knife for anyone on the fence about purchasing. Most people know that Kagekiyo makes incredibly well refined knives in Aogami, Shirogami, and Ginsan, but this Chromax santoku is one of the best knives I have tried in terms of price to performance and out-cuts an embarrassing amount of my $300+ knives.
The fit and finish is what you expect from Kagekiyo, the handle is simple but comfortable, and the cutting experience is shockingly smooth.

These are certainly not as fine as the typical knives from Kagekiyo/Baba Hamono, but this series is an incredible value. High performance steel, super thin and sharp, with very good fit & finish. Even the simple walnut handle is perfectly sized and finished. Thank you Sam.
