Honesuki Kaku knives are designed for breaking down chickens and poultry. The extra height at the heel allow for push cuts and the tip is thin allowing for careful work when de-boning. Sakai Kikumori’s Nihonko series have a carbon mono-steel blade and a comfortable western style handle. Ease of sharpening and good edge life make these knives an excellent all-around value. These knives have a right handed bias, with the right side of the knife with a convex grind and the left side is flat. They are typically sharpened 90/10.
**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
**While this knife is designed for tough use, do not pry or twist the edge when using to avoid damage.
