Takahiro Nihei is a highly skilled knife maker based in Fukushima, and is adept at working with a wide variety of steel types. This line features SLD tool steel core, which is 'almost' stainless, very low maintenance, and holds a good toothy edge for a long time. The blades have nice contrast in their finish with a rustic nashiji finish on the cladding and a mirror polished bevel and edge. They are beautifully hand engraved with his kanji signature, and fitted with chestnut wood octagonal handles.
**Dry thoroughly after use. Left wet, semi-stainless steel can rust, dull quickly and develop pits in the edge.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
