Pallares is a third generation family run company in Solsona, Spain. Started in the early 20th century in what was then a center of knife-making, they are now the last of the traditional companies in Solsona still producing knives. They produce wonderful hand ground knives and tools for cooks, butchers, gardeners, and farmers.

**Extra care is required with carbon steel. Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use. No soaking or dishwashers!

Much bigger than a paring knife, this 5. 5 inch boning knife is perfect for its job: removing chicken breasts, taking the fins off a white fish, drawing a small fine line down the bone line of salmon to remove the pin bones, defatting a shoulder roaast, or just opening an orange or a grapefruit into segments, even just something mundane like prepping bell peppers if the knife was already in hand. This model has a moderate drop on the finger guard which really aids safety when deep into fish slime - way better than the Global type/brand with an all metal build. Its thick wood handle gives a lot of control. I now use this knife for everything "medium sized" when prepping. It holds an edge well enough, is easily sharpened, and is a hell of good bargain for around $35. Thanks Sam for recommending this blade!
