Sakai Kikumori’s Kikuzuki Gin series feature a polished blade style called so-bokashi. It is is completely hand ground on large wheels, and there is pronounced convexity making for an excellent cutting feel.
These knives are forged by Satoshi Nakagawa, an expert at working with stainless steels. Ginsan has a good balance of properties: stainless, good edge life, easy to sharpen, and good toughness.
