Sakai Kikumori’s Kikuzuki Gin series feature a polished blade style called so-bokashi. It is is completely hand ground on large wheels, and there is pronounced convexity making for an excellent cutting feel. Because of the nature of the finish, there are some deeper scratches left in the finish and each piece may vary.
These knives are forged at Nakagawa Hamono, one of the best in the business in Sakai city especially when working with Ginsanko stainless steel. Ginsanko has a good balance of properties: stainless, good edge life, easy to sharpen, and good toughness.
Sakai Kikumori is the flagship brand of Kawamura Hamono, producing top quality Japanese and Western style kitchen knives in Sakai, one of the oldest knife making centers in Japan. They have been producing knives since the 1920’s and have maintained long standing relationships with some of the best blacksmiths and blade grinders in Sakai.

**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
