These knives are forged for Sakai Kikumori by Satoshi Nakagawa, known for top level heat treatments, pulling extra toughness and ease of sharpening out of high hardness steels. They are ground in the wide bevel style and have a stellar mirror polish.

**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
