These knives sport octagon shaped Japanese Magnolia (Ho) and horn handles and an SRS13 powder steel core that has excellent edge retention! SRS13 steel has a high carbon content, high hardness, but a nice fine grain, making it fairly easy to sharpen as well. A great all around workhorse knife that is easy to maintain. Each knife is hand engraved with the makers mark.
Sakai Kikumori is the flagship brand of Kawamura Hamono, producing top quality Japanese and Western style kitchen knives in Sakai, one of the oldest knife making centers in Japan. They have been producing knives since the 1920’s and have maintained long standing relationships with some of the best blacksmiths and blade grinders in Sakai.
**Dry thoroughly after use. Left wet, stainless steel can dull quickly and develop pits in the edge.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
