The TS10 series from Sakai Kikumori have a three layer blade with a VG10 steel core, hammer-marked tsuchime cladding and octagon shaped walnut wood handles. These knives have excellent edge life and wear resistance.

Sakai Kikumori is the flagship brand of Kawamura Hamono, producing top quality Japanese and Western style kitchen knives in Sakai, one of the oldest knife making centers in Japan. They have been producing knives since the 1920’s and have maintained long standing relationships with some of the best blacksmiths and blade grinders in Sakai.

**Dry thoroughly after use. Left wet, stainless steel can dull quickly and develop pits in the edge. 

**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.

I’ve really fallen in love with this knife. The first thing I noticed was how light and nimble it feels in the hand, but what has impressed me most is the precision. After cutting the two sides off a peach, I can easily glide the knife along the pit and take off a single clean strip of fruit. It’s that kind of control that makes it such a pleasure to use.

It slides effortlessly through onions, cabbage, greens—honestly, just about everything I’ve put in front of it. Prep work feels less like pushing a knife through food and more like simply guiding the blade. It has also done an excellent job of retaining its edge.

Just as important has been the experience of buying it from Uptown Cutlery. Uptown is a wealth of knowledge, and there’s a genuine enthusiasm for sharing that knowledge rather than simply selling you a knife. That makes a specialty shop like this particularly valuable.

This was my first really good Japanese kitchen knife, and now I understand what all the fuss is about. Highly recommended.

Great knife

Sizable but precise blade and long handle, great for my larger hands.
