Old school monosteel, entire blade is made from carbon Aogami #2 (Blue #2) steel, for excellent edge life, wear resistance and toughness. The blades on these have a slight right hand bias, and are sharpened 70/30, but could be sharpened 50/50 and would be fine for a lefty.

**Dry thoroughly after use. Left wet, carbon steel can rust, dull quickly and develop pits in the edge. With proper care, the blade will develop a patina, which will help protect from further rusting.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
