Honesuki Kaku knives are designed for breaking down chickens and poultry. The extra height at the heel allow for push cuts and the tip is thin allowing for careful work when de-boning. These knives have a right handed bias, with the right side of the knife with a convex grind and the left side is flat. They are typically sharpened 90/10 (90% on the right face and 10% on the left face)
