Shibata Koutetsu R2 140mm Ko-Bunka

The Koutetsu knives from master sharpener Takayuki Shibata are expertly ground laser thin with perfect convexity, making for some of the smoothest cutting knives on the market.

These knives feature a R2 (SG2) powder steel core and stainless cladding. They are extremely low maintenance and non-reactive, but with high hardness, they will have excellent edge retention.

**Dry thoroughly after use. Left wet, stainless steel can dull quickly and develop pits in the edge. 

**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
