These gyuto are a little bit different than most, they have a slightly shorter and more curved profile, and slightly thicker grind, making them more like a tall workhorse slicer. They are excellent portioning and cutting meats as well as awesome for butchering fish!
Forged in Tosa, Japan. These rustic handmade knives are a great starting point for anyone wanting to get into sharpening and maintaining their own knives on whetstones. Out of the box, they have 'workhorse' style grinds and fairly rough fit and finish. For some folks, that's fine! They are meant to be affordable tools, and that means some finishing steps that are typically done on higher end cutlery won't be done on these. Regardless, they are forged with top quality Hitachi made Shirogami #1 (White Steel #1), which is a pure carbon steel with a high carbon content, making for an easy to sharpen knife that has great edge life too. They are handled with really nice octagon shaped oak wood handles. In our opinion, this series is a really killer bang for your buck.
