These knives have an Aogami Super carbon steel core with polished stainless cladding. Aogami Super (Blue Super) steel has a high hardness, wear resistance and excellent edge life, and the stainless cladding makes it easy to care for. The traditional styled oval handles are rosewood with pakka wood ferrule.

Boxed. Made in Japan.

**Dry thoroughly after use. Left wet, carbon steel can rust, dull quickly and develop pits in the edge. It will develop a patina with normal care, but rust should be removed.

**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
