Tsunehisa Shirogami #1 240mm Gyuto Tsuchime
These knives have a Shirogami #1 (White Steel) carbon steel core sandwiched between stainless cladding, for ease of care. Shirogami #1 has a high carbon content, for excellent edge life, and is very easy to sharpen, but is a bit more reactive than other steels, so extra care should be kept to keep the edge dry. The blades have an attractive hammer marked finish on the sides, which also contribute to good food release.
Handled with an elegant magnolia wood handle with a buffalo horn ferrule.

**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
