The 'Nouvel Ideal' knives are a collaborative series from K Sabatier and Bernal Cutlery, paying homage to the 'Ideal' knives made by K Sabatier in the 1920's.
A hybrid bread/chef knife. The serrated tip breaks tough crusts and the heel has power to get through the bottom of the bread. Also useful for tougher vegetables such as squash and sweet potatoes, and tough skins like tomatoes!
PLEASE NOTE! The carbon steel knives from K Sabatier may have small bends and warps in the blade, due to the manufacturing process. They also may have light pitting and rust from long term storage. They will be cleaned and sharpened before shipping.
**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
