Forged with Aogami #2 carbon steel and iron cladding. These knives have a rustic blacksmith's (kurochi) finish. They have round Keyaki wood handles.
Based in Tosa, Japan, Kyohei Shindo is a younger blacksmith forging excellent carbon steel knives at an affordable price-point. We love the thin precise grinds on his knives, and they have a cutting feel that rivals knives twice the price.
