Sakai Kikumori’s Choyo series feature a brilliant mirror polish, ambidextrous wide bevel style grinds, and rounded and polished choil and spine. They are forged at Tanaka Hamono, and sharpened polished at Morihiro Hamono, both top level workshops in Sakai City, Japan. They manage to coax toughness, hardness, edge life and sharpenability out of the steel, which is not easy! Handled with an octagon shaped Ebony wood handle with a Buffalo horn ferrule.
Sakai Kikumori is the flagship brand of Kawamura Hamono, producing top quality Japanese and Western style kitchen knives in Sakai, one of the oldest knife making centers in Japan. They have been producing knives since the 1920’s and have maintained long standing relationships with some of the best blacksmiths and blade grinders in Sakai.
