Sakai Takayuki 180mm Gyuto TUS Stainless Steel
A gyuto is essentially a Japanese version of Western style chef's knife, and does not include a bolster, making it much easier to sharpen on whetstones. This size, 180mm or 7ish inches is great as a small knife for professional cooks on the line during service, or for anyone that wants a slighly smaller knife but still have plenty of knuckle clearance.
Sakai Takayuki's TUS series knives offer very thin stainless steel blades that hold and edge and are easy to re-sharpen. The stamped blades are made of high-carbon stain resistant Japanese steel, and the full tang riveted handles are made of durable pakka wood. We think these are an excellent choice as an introduction to Japanese knives and as an affordable professionals knife.
