The Maboroshi series from Teruyasu Fujiwara is forged with a super hard Shirogami #1 carbon steel core and a soft stainless cladding with a rustic hammered finish. Expect excellent edge life and sharpenability from these knives with relatively low maintenance thanks to the stainless cladding.

Teruyasu Fujiwara is a master-smith based in Tokyo that hails from a family of sword makers. Post WWII, the Fujiwara family turned to making kitchen knives and pioneered the process of forging knives with a stainless cladding and a hard carbon steel core.  We find Fujiwara's knives to have excellent cutting feel and food release thanks to the convex primary grinds and the hammer-marked finish on the sides. Each knife made in Fujiwara's shop is rustic, unique and different from the next, as they are truly free-forged and hand ground.
