The brainchild of Takayuki Shibata, 'The Bitey Finisher' is a medium grit finishing stone, designed to give your knives more bite than a finer polishing stone. The stone is made of a harder material than typical medium grit stones, so it does a better job de-burring the knife, and leaves a very aggressive toothy edge, especially good for tomato and pepper skins!
Shibata-san recommends soaking at least 10 minutes, then using the 600 side to raise and establish a burr on the microbevel, then using the 1200 side, do the same. To finish the knife, return to the 600 side and do one pass on the right side of the knife from heel to tip, then turn to the 1200 and do one pass on the left side of the knife. Repeat this process 3-4 times, then use a strop to finish the edge. This leaves an edge with a 'differential grit' finish, an extra toothy edge.
