Hand-forged with Shirogami #2 (White Steel) carbon steel core and iron cladding with kurouchi finish. Shirogami steel has good edge life, and is very easy to sharpen, but is a bit more reactive than other steels, so extra care should be kept to keep the edge dry.
**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
