Tsunehisa Shirogami #2 165mm Santoku Tsuchime
These knives have Shirogami #2 (White Steel) carbon steel core conveniently sandwiched between stainless cladding, for ease of care. Shirogami steel has good edge life, and is very easy to sharpen, but is a bit more reactive than other steels, so extra care should be kept to keep the edge dry. The blades have an attractive hammer marked finish on the sides, which also contribute to good food release. The traditional styled handles are oval shaped cherry wood
**Extra care is required with carbon steel. No soaking or dishwashers! Dry well in between uses to avoid rust. Blade will develop a patina (discoloration) with normal use.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
