Honesuki kaku knives are for breaking down and de-boning poultry. This version features a 50/50 bevel, great for use with either the right or left hand. 

Tsunehisa's Damascus Tsuchime series have a robust three layer blade with a VG10 steel core, hammer-marked 17 layer damascus patterned cladding. These knives have excellent edge life and wear resistance.

**Dry thoroughly after use. Left wet, stainless steel can dull quickly and develop pits in the edge. 

**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
