Tsunehisa ZA18 240mm Sujihiki Damascus
Sujihiki knives are designed for slicing meat and fish, and will also handle vegetable to a certain degree, but not for chopping, because of lack of heel height.
These knives feature a polished damascus cladding with a ZA18 stainless steel core. ZA18 is a high carbon stainless alloy with cobalt added, for excellent edge life and durability.
Boxed. Made in Japan.
**Dry thoroughly after use. Left wet, stainless steel can dull quickly and develop pits in the edge.
**To avoid chipping, keep away from bones, frozen foods or other hard foods and pits.
